Mangrove Jack’s M54 Californian Lager is the hybrid-fermentation workhorse of the MJ Craft Series — a bottom-fermenting lager yeast strain that breaks the rules by producing genuine lager character at ale temperatures (15–20°C). No dedicated cold room, no weeks of lagering, no secondary fermentation vessel running at 2°C: just clean, crisp, commercially credible lager from a standard homebrew setup. For Australian home brewers without temperature control reaching into single digits, M54 is the practical path to lager.

Brewing Notes
Ferment at the lower end of the range (15–16°C) for the most authentic lager character — clean malt, restrained noble hop bitterness, and minimal ester production. Stepping up to 19–20°C speeds fermentation but introduces slightly more fruity notes; still clean by most standards, but distinct from a traditional cold-fermented result. After primary fermentation, a cold conditioning period at 5–10°C for 1–3 weeks significantly improves clarity and rounds out any remaining sharpness — worth doing if you have the space. M54 suits all-malt lager grists as well as adjunct-based formulations (rice, corn) typical of commercial Australian lager styles.
