M15’s relatively low attenuation range (71–75%) is a feature, not a limitation — it leaves a fuller, rounder body with greater residual malt sweetness, which is exactly right for the style. Ferment at the lower end of the range (18–19°C) for a restrained, clean English character; stepping up to 21–22°C encourages more pronounced fruity ester production, which suits richer, darker styles. High flocculation means the yeast drops out quickly — expect bright beer within 3–5 days of krausen fall, often without any fining.
