Description
LalBrew London is Lallemand’s traditional English ale yeast, bringing the malt-forward, estery character of London’s great bitter and ESB breweries to homebrew scale. Where many “English” yeasts are neutral American-origin strains in disguise, LalBrew London delivers genuinely British character: a biscuity malt backbone, light stone-fruit esters, and the balance that makes a pint of ESB feel complete. Brewing Notes
London yeast’s lower-than-average attenuation (69–75%) leaves a fuller body in the finished beer — ideal for styles where residual sweetness and malt presence are features, not flaws. Medium-high flocculation drops it clear reliably without fining. The ester profile runs to light stone fruit and a subtle earthiness that is very distinctly “London pub” — understated, balanced, and malt-forward. Ferment at 18–20°C; pushing higher temperatures accentuates the fruity esters and can tip into slightly jammy territory, which ESB does not want.
Beer Styles & Brewing Tips
- ESB (Extra Special Bitter) — the natural home for London yeast. Malt-forward, moderate bitterness from EKG or Fuggles, full-bodied finish. Ferment at 19°C for the textbook result.
- English Bitter & Best Bitter — lower gravity versions (OG 1.035–1.048) where malt character and residual sweetness are part of the style definition.
- London Porter — the fuller body pairs beautifully with roasted malt; a slightly higher ferment temperature (20–21°C) adds complexity.
- English IPA — a historical-style IPA with genuine British character rather than modern West Coast dryness — rich, balanced, and very drinkable.
In Australian conditions, London yeast performs well in the cooler months (April–September) in southern states without temperature control equipment. Summer brewing will require fermentation management to stay within range, which is straightforward with any basic aquarium controller setup.
