The recommended dosage for a standard 19-23 liter batch is two 12g sachets, providing ample viable cells for efficient fermentation. For larger batches, the dosage rate is calculated at 0.66-1.06g per liter, or 80-120 grams per hectoliter.

It is advisable to round up to the nearest full sachet to ascertain sufficient yeast population. The specific dosage may vary based on factors such as wort temperature and gravity.

Direct pitching is the preferred method, although rehydration is optional for enhanced performance. When rehydrating, a ratio of 10ml of water at 29-35°C per gram of yeast is recommended, with the addition of 0.25g of FermStart per gram of yeast for peak results.

Direct Pitch or Rehydrate

When using CellarScience’s German Lager Yeast, brewers have two options for pitchingdirect addition to the wort or rehydration before pitching.

The direct pitch method involves sprinkling the dry yeast directly onto the wort surface, eliminating the need for initial oxygenation. This approach simplifies the brewing process and saves time.

Alternatively, rehydration can enhance yeast performance. To rehydrate, sanitize the yeast packet and scissors, then mix 10 ml of water (29-35°C) with 0.25 g of FermStart per gram of yeast. Allow the slurry to rest for 20 minutes before swirling. Prior to pitching, adjust the slurry temperature to within 6°C of the wort temperature.

While both methods are effective, direct pitching is generally recommended due to its simplicity and the yeast’s high viability resulting from its aerobic growth process.
