The Quantum Brite SIM hop extract delivers the dank, resinous Simcoe character that defined the original West Coast IPA movement in concentrated, pellet-free form. Flavour Profile
Simcoe is characterised by its duality: intense pine and resin on one side, tropical citrus (passionfruit, apricot) on the other, held together by a distinctive catty or blackcurrant note that experienced hop heads associate immediately with the variety. The catty character can be polarising in isolation but integrates beautifully in blends or when balanced by a full malt backbone. In extract form, the resinous pine and citrus notes come through most strongly — making SIM particularly effective as a dry-hop extract in West Coast IPAs where that resinous character is the point, or as a supporting player in hazy IPA blends where it adds structure and complexity alongside fruitier extracts like GXY or NRN.
Dosing Quantum Brite SIM
Add during cold crash (1–4°C) directly to the fermenter or keg using the included pipette. Shake well before measuring and start conservatively at 1.5ml per 23L — Simcoe’s resinous character can tip into harshness at higher doses, especially in lighter-bodied beers. At 1.5–2ml per 23L it integrates as a clean, piney-citrus finishing note without dominating the palate. SIM blends well with MOS (Mosaic) at equal parts for a classic West Coast profile: Mosaic’s earthiness and SIM’s pine/catty resin produce a combination that reads as distinctly West Coast American IPA. For hazy applications, pair with GXY at 40% SIM / 60% GXY to ground Galaxy’s tropical brightness with Simcoe structure. Refrigerate after opening.
