Description
SafAle K-97 is Fermentis’s German ale yeast — a clean, delicate strain producing subtle floral and fruity character without the heavy esters or sulfur notes of some ale strains. It’s the go-to dry yeast for Kölsch, where a brief ale fermentation followed by cold conditioning produces a bright, crisp golden beer with barely-there yeast character. K-97 also performs well in Belgian Wits, Session Beers, and heavily hopped pale ales where a light fermentation touch is called for.

Brewing Notes
K-97’s slow flocculation is characteristic and important — the yeast stays in suspension longer than most ale strains, driving cleaner attenuation and better flavour integration before it finally drops. Plan for cold conditioning (lagering at 2–5°C for 2–4 weeks) after primary to pull protein haze and allow the yeast to fully clarify. The result is a beer that looks and drinks like a lager despite an ale fermentation process.
Beer Styles & Brewing Tips
K-97’s clean, delicate character makes it the natural choice when you want an ale yeast that doesn’t taste like an ale yeast — the defining challenge of Kölsch and similarly refined German styles.
Best styles: Kölsch (the style K-97 was built for — ferment cool, lager cold, serve bright in a Stange glass), German Golden Ale (a sessionable, informal cousin of Kölsch with the same low-ester profile and approachable character), Hoppy Blonde Ale (K-97’s clean neutrality supports dry-hopped pale ales where competing esters would be unwelcome).
Australian brewing tips:
- Kölsch is traditionally a low-gravity, session-strength beer (1.040–1.048) — brew light for authentic drinkability and easy fermentation management.
- Cold conditioning at 2–5°C for at least 2 weeks is essential — skipping this step produces a hazy, underattenuated beer that lacks the signature Kölsch crispness and clarity.
- K-97’s slow flocculation requires patience — don’t rush packaging. The beer improves dramatically with cold conditioning time.
- Pair with Hallertau Mittelfrüh or Perle hops for authentic German character; or experiment with Helga (AU Hallertau relative) for a local interpretation of the style.
In the Glass
Restrained floral and lightly fruity aroma. Clean malt backbone with minimal yeast-forward character. A subtle, elegant strain best suited to beers where clarity and drinkability define the style.

Recommended Hops for This Yeast
German ale yeast works best with restrained, noble or soft hops that support rather than overwhelm.
- Saaz Hops — Noble lager hop — spicy, herbal, the traditional choice for Kölsch and Altbier
- East Kent Golding Hops — Earthy, floral English noble — soft bitterness that doesn’t compete with the yeast
- Chinook Hops — Clean pine bitterness for dry-hopped Kölsch — subtle resin without dominating
- Cascade Hops — Low-rate late addition — citrus lift that works with the clean German ale profile
