Description

SafAle K-97 is Fermentis’s German ale yeast — a clean, delicate strain producing subtle floral and fruity character without the heavy esters or sulfur notes of some ale strains. It’s the go-to dry yeast for Kölsch, where a brief ale fermentation followed by cold conditioning produces a bright, crisp golden beer with barely-there yeast character. K-97 also performs well in Belgian Wits, Session Beers, and heavily hopped pale ales where a light fermentation touch is called for.

Plan for cold conditioning (lagering at 2–5°C for 2–4 weeks) after primary to pull protein haze and allow the yeast to fully clarify.
