Pitch at 12°C and ramp slowly to 14–15°C toward the end of fermentation for complete diacetyl cleanup before crash cooling. Available in 11.5g (single-batch) or bulk 100g/500g formats for larger volumes or repitching. Dosage 80–120 g/hL; pitch fresh or rehydrate in 25°C water for 15 minutes.
