Neutral flavor and consistent performance across diverse fermentation conditions make LalBrew Nottingham™ and ideal house strain for producing a wide variety of beer styles. Through moderate expression of β-glucosidase and β-lyase enzymes, LalBrew Nottingham™ can promote hop biotransformation and accentuate hop flavor and aroma.

LalBrew Nottingham™ is one of the original Heritage Strains selected from the Lallemand Yeast Culture Collection when Lallemand Brewing was founded in 1992. Traditional styles brewed with this yeast include but are not limited to Pale Ales, Ambers, Porters, Stouts and Barleywines. In addition to these traditional styles, LalBrew Nottingham™ can be used to produce Golden Ale, Kölsch, Lager-style beers, IPA, and Imperial Stout, among many others. LalBrew Nottingham™ is a stress tolerant making it a good choice for high gravity, sours, re-starting stuck fermentations and other challenging fermentation conditions

Description

LalBrew Nottingham is the workhorse dry yeast that every homebrew shelf should have. Developed by Lallemand, this English-origin ale strain delivers a reliably neutral, clean fermentation across an unusually wide temperature range — from a cool 10°C up to a warm 22°C — making it one of the most versatile dry yeasts available to Australian homebrewers. It ferments vigorously, drops bright without finings, and produces virtually no off-flavours.

Brewing Notes

Nottingham’s high flocculation is its headline feature — it falls out of suspension fast and hard, producing brilliantly clear beer without cold crashing or fining agents. The neutral ester profile means your malt and hop choices take centre stage, making it an excellent base yeast for almost any ale style. It also ferments credibly cold: at 10–12°C it produces a lager-like profile that has become popular with Australian homebrewers who want clean, cold-fermented ales without dedicated lager equipment.

Beer Styles & Brewing Tips

  • English Pale Ale & Bitter — pair with EKG or Fuggles for classic balance. Ferment at 18°C for a clean biscuity base.
  • American IPA — the neutral profile lets bold hop additions dominate. Ferment at 19–21°C for maximum hop aroma retention.
  • Stout & Porter — very high attenuation dries the body nicely; ferment at 17–18°C for smooth roast character.
  • Pseudo-lager — pitch at 10–12°C and ferment cold for 10–14 days. Popular for Australian summers when lager fermentation is not practical without a dedicated fridge.

In Australian conditions, Nottingham performs reliably even in a 20°C garage in autumn or spring — but watch temperatures above 22°C in summer, which can push fusel production. A basic aquarium controller and old fridge or ice bath is all you need for year-round control.

In the Glass

Expect a clean, neutral beer where malt and hops define the character. At warmer temps, a faint fruity note emerges; at cooler temps, a lager-crisp finish. Very high clarity at packaging.
