Description

CellarScience VELO is a dry ale yeast isolated from a Norwegian mixed culture and selected for two things: raw speed and flavour neutrality. It ferments hard, drops bright and finishes brilliantly dry, contributing almost no ester or phenol character of its own, so the malt and hops do all the talking. VELO also runs cleanly across a 16 to 34°C window with no tight temperature control, which makes it one of the few strains that stays predictable through an Australian summer. Brewing Notes

Sprinkle VELO straight onto the surface of the wort. No rehydration and no pre-oxygenation needed. Ferment at 16 to 20°C when you want the crispest, most lager-like result, or push to 26 to 34°C when you need the fastest possible turnaround. Unlike most ale strains, the profile stays clean at the top of that range, so warm fermentation costs you speed and nothing else. Medium to high flocculation means it drops bright quickly, and the 12 PSI tolerance suits pressure fermentation in a keg or unitank.

The 15g sachet carries over 36% more cells than a standard 11g pack, so a single sachet comfortably pitches a full 23L batch at ale gravities. For seltzers and other low-nutrient worts, pitch at the top of the range, closer to 1g per litre.

Beer Styles and Brewing Tips

VELO is a get-out-of-the-way workhorse. It suits any beer where the hops, the malt or the fruit should be the star and the yeast should be invisible.

Best styles: Hop-forward IPA and West Coast IPA (the dry finish and neutral canvas make dry hops read brighter and sharper), Pseudo-Lager (ale-speed fermentation with a lager-clean result, no lagering fridge needed), Session Ale and Pale Ale (low gravity, quick turnaround, grain to glass in about a week), Hard Seltzer (nothing for the yeast to hide behind, so neutrality matters), and Pressure-Fermented Ale (up to 12 PSI, clean and quick).

Australian brewing tips:

  • If you have no temperature control, VELO is the safe choice. A 30°C garage in January will still give you clean beer, where a standard US ale strain would throw fusels and solvent notes.
  • Ferment at 16 to 20°C to mimic a lager, then cold crash for a day or two. Medium to high flocculation does most of the clearing work for you.
  • Dry hop after fermentation finishes rather than during it. VELO does very little biotransformation, so the payoff is in a clean, late dry hop that keeps the aroma sharp.
  • At 75 to 83% attenuation this yeast finishes dry, so mash a little higher, around 67 to 68°C, if you want body left in a session beer.
  • For seltzers, use a proper yeast nutrient addition and pitch at 1g per litre. There is no malt in the wort to feed on.
