SafBrew LD-20 is an All-In-One™ yeast and enzyme blend for brewing ultra-dry, low-carb lager. It combines Saccharomyces pastorianus lager yeast with glucoamylase enzyme — which breaks down the long-chain dextrins normally left unfermented by yeast. The result is a beer with up to 98–102% apparent attenuation and significantly reduced residual sugar. The glucoamylase enzyme in LD-20 continues working throughout fermentation and conditioning, converting dextrins to fermentable sugars. This drives attenuation well beyond what yeast alone achieves — approaching 100% apparent attenuation in practice. Dosage is higher than a standard yeast sachet at 160–240 g/hL due to the enzyme co-formulation. Ferment cool (12–16°C) for the cleanest flavour; the enzyme’s activity continues even at low temps.
