In Lallemand’s Standard Conditions Wort at 20°C (68°F) LalBrew Belle Saison™ yeast exhibits:

Saccharomyces cerevisiae var. diastaticus strains are capable of utilizing some types of dextrins. Extra care should be taken to ensure proper cleaning procedures are in place to avoid any cross-contamination with other brews.

Where most ale yeasts demand cool fermentation to prevent off-flavours, Belle Saison actually thrives at high temperatures — it was selected specifically for this character, fermenting cleanly right up to 35°C. That makes it the go-to strain during an Australian summer when cellar temperatures spike and other yeasts struggle.

Belle Saison is POF-positive (phenolic off-flavour positive), meaning it produces both fruity esters and spicy phenolic compounds — the combination that defines classic Belgian and farmhouse character. Attenuation is very high (>80%), which dries the body and accentuates the spicy, effervescent finish that saison drinkers love. Start fermentation at 20–22°C and allow the temperature to free-rise as activity ramps up for maximum ester and phenol complexity. Low to medium flocculation means a brief cold crash or finings will clear it if your style calls for a brighter presentation.
Beer Styles & Brewing Tips
- Classic Saison — start at 20°C, let the temperature rise to 28–30°C over 3–4 days. This temperature ramp drives the complex fruity-spicy saison profile. Dry-hop lightly with Saaz or Nelson Sauvin for a modern farmhouse twist.
- Bière de Garde — ferment cooler (18–22°C) for a malt-forward, less phenolic result with good attenuation and clean Belgian character.
- Belgian Tripel — Belle Saison’s high attenuation and alcohol tolerance make it a capable stand-in for dedicated tripel strains; ferment at 22–24°C.
- Summer Saison (ambient fermentation) — in the Australian summer, uncontrolled fermentation at ambient shed temperatures (28–33°C) is actually appropriate for this yeast, a genuine advantage during our hottest months when other strains falter.
