Building a Yeast Bank

Repitching yeast from a finished batch is one of the most cost-effective practices in home brewing — commercial breweries routinely repitch the same yeast strain through dozens of generations, and home brewers can achieve 5–10 generations with proper technique before yeast health and character drift becomes noticeable. The process is straightforward: after racking your beer to secondary or packaging, the settled yeast cake in the fermentor contains billions of healthy cells. Sanitise a vial, add a small amount of cooled boiled water to the cake to loosen it, swirl gently, and transfer 30–40ml of the resulting slurry into the vial. Cap, label with strain and date, and refrigerate. The vial stores viable yeast for 4–8 weeks under refrigeration, ready to pitch directly into your next same-strain batch.

Yeast Washing and Storage Technique

For longer-term storage and purer yeast samples, the slurry can be washed to remove hop debris, trub, and dead cells before vial storage. The basic approach: add cooled boiled water to the yeast cake, swirl, and allow to settle for 20 minutes in a sanitised container. The dead cells and trub settle to the bottom first; the healthy live yeast remains in suspension and is carefully decanted into the storage vial, leaving the debris behind. Washed yeast stored at 2–4°C in a sealed vial remains viable for up to 2–3 months, significantly extending the useful storage window for strains you want to keep in your collection.
